Ginger wine on the go and my first crop

My kohl rabi were harvested this morning, think it coul taste a cross between a cabbage and a swede.Going to boil one tonight choppped and mash it.
Ginger wine on the go this morning 5 gallons this time as from what i´ve read you need to keep the bottle full to stop oxidation,so hoping my elderflower 2 gallon will be ok.The ginger wine smells good. Hope it turns out like Stones ginger wine!!!!The next wines i fancy making are peapod apparantley tastes like melon!,strawberry, apples from my tree come autumn, elderberrys later on,blackberries.......the list is endless, think i need a shed lol!!!!
